Goulash (serves 4)

Ingredients: 600g beef stewing meat, 1 red bell pepper, 2 onions, 2 carrots, 250g mushrooms, 1 tsp paprika powder, 1 tbsp tomato paste, 200ml red wine, 200ml vegetable stock, 400g peeled tomatoes, 1 tbsp olive oil, 2 cloves of garlic, salt and pepper

Preparation

1. Finely chop the onion and slice the mushrooms.

2. Chop the carrots and bell pepper into pieces.

3. Heat the olive oil in a stew pot and brown the meat. Season with salt, pepper, and paprika powder.

4. Add the onion, carrots, bell pepper, garlic and mushrooms and sauté until translucent.

5. Stir the tomato paste into the vegetables and deglaze with the red wine.

6. Add the stock and peeled tomatoes.

7. Simmer gently for about 2 hours until the meat is tender.

8. Serve with bread, rice, or pasta.
